Quick and Tasty Instant Pot Japanese Curry Recipe

I recently made Japanese curry using my Instant Pot, and it has completely changed my weeknight dinner routine. The Instant Pot makes it so easy to create a delicious, hearty meal in no time, letting me skip the lengthy preparation of traditional cooking methods. I was initially unsure about how it would turn out, but the flavor and richness brought back memories of the comforting meals from my childhood.

For this dish, I used classic curry roux, along with potatoes, carrots, and chicken thighs. The pressure cooking really brought the flavors together, and everything came out incredibly tender.
