Tasty Barbecue Ideas for a Plant-Forward Feast

As summer heats up, it’s the perfect opportunity to fire up the grill and try out some delicious barbecue ideas! I love to experiment in the kitchen, and lately, I’ve been focusing on incorporating more plant-based recipes into my grilling routine. The great thing about barbecuing is that it’s not just for meat—there are so many vibrant veggie options that are equally satisfying.

One of my recent favorites is grilled vegetable skewers. I marinated a colorful mix of bell peppers, zucchini, and red onions in a zesty lemon-herb dressing, then threaded them onto skewers and grilled them until they had a nice char. The flavors were bright and refreshing, and they paired perfectly with a side of herbed quinoa. If you enjoy Greek flavors, adding some feta or tzatziki on the side really enhances the meal.

Another hit has been stuffed portobello mushrooms. I packed the caps with a tasty mixture of spinach, garlic, and pine nuts, then grilled them until they were tender. They make a hearty main dish that feels both indulgent and healthy, and they look gorgeous on the plate!
