I usually stick with a 00 flour for a smoother texture, but I’ve tried mixing in some semolina for extra bite, and it really helps! As for kneading, I go for around 10 minutes, until it feels silky. And seriously, a simple garlic and olive oil sauce is my favorite—just toss the hot pasta in that, and it’s unbeatable!
