Let’s share our experiences! What’s your favorite pasta recipe to make from scratch?

I’ve found that using a mix of semolina and all-purpose flour gives a nice texture. As for rolling, I love the old-school hand method—it feels more authentic and gives me better control. A little extra rest time for the dough seems to really help too! What about you?

Rolling by hand definitely has its charm, but I think a good pasta machine is a game changer for getting that even thickness. For flour, I usually go for a mix of 00 flour and semolina for a nice bite. Do you guys ever try infusing the dough with flavors, like spinach or beet?
