I love making a veggie stir-fry with whatever leftovers I have in the fridge. Just toss them in a pan with some soy sauce, garlic, and ginger, and it’s done in about 15 minutes. Pair it with rice or noodles, and you’ve got a quick and tasty dinner!
One of my favorites is a one-pan chicken and veggie bake. Just toss some chicken thighs and whatever veggies you have on a sheet pan, drizzle with olive oil, season, and pop it in the oven for about 30 minutes. Super easy and the cleanup is a breeze!
